- 300 gr. macaroni
- 1 zucchini
- 1 egg
- 1 onion
- 200 gr. tofu
- 150 ml. fried tomato
- Black pepper
1. Put plenty of water in a wave and heat over high heat. When it starts to boil, add the macaroni and a pinch of salt and cook as indicated by the manufacturer (about 10 minutes). Drain and reserve.
2. Put water to boil in a small saucepan, add the egg and cook for about 15 minutes. Peel the shell after passing it through cold water
3. Chop the onion very finely. Put a drizzle of oil in the pan over medium heat, when it is hot add slices of zucchini and onion, and sauté until done. Add the fried tomato, the chopped hard boiled egg, a little oregano and season to taste. Leave on low heat for a couple of minutes.
4. Preheat the oven to 200º. Pour the macaroni with the tomato on top in a baking dish. Grate the soy cheese and pour it over the macaroni, bake for 10 minutes at 180ºC so that they are au gratin.
